Happy Cinco de Mayo! Pair this delicious cocktail with your salmon with citrus salsa, and create a colorful salted rim using Li Hing salt to really shake things up!

- 2 oz tequila reposado
- 1 oz campari
- 4 oz grapefruit juice
- 2 tablespoons sugar
- 6 kumquats
- juice of ½ a lime
Muddle kumquats with sugar and lime juice in the bottom of a cocktail shaker.
Trace glass with lime wedge and dip in li hing salt (alternatively you can use margarita salt).
Add remaining ingredients to shaker with ice.
Shake, then strain into glass. Top with crushed ice.
Makes one cocktail.
